The Italian chef expands his culinary empire with a new Nove branch in Central’s The Galleria
Central's food scene is about to get a dash of delectable déjà vu, as the ever-popular modern dim sum lounge and Cantonese fine-dining concept Nove opens its next location, in The Galleria on Queen’s Road Central.
The venue, Nove at The Galleria, is a complement to its nearby sister outlet, Nove at The Fringe, located in the heritage-listed Fringe Club on Lower Albert Road. Both locations are backed by chef Umberto Bombana, the decorated maestro behind three-Michelin-starred 8½ Otto e Mezzo Bombana and founder of the hospitality brand Octavo Group.
The sophisticated multi-floor destination offers an intimate lounge, elegant dining room and meticulously crafted menu, by Bombana and his talented team. At the new opening, diners can expect the same exacting standards, impeccable execution and gastronomic creativity that have become Bombana's calling card.
Where Nove at The Galleria differs is by taking full advantage of its impressive street-level space in this prime location, converting the upper floor into a dedicated lounge area that can be reserved for private events or frequented for intimate cocktails and small plates.
Downstairs, an elegantly appointed dining room invites guests to experience the full offerings of a revamped menu, marrying signature dishes with fresh, venue-exclusive additions. Many of Nove’s classic dim sum dishes are available in the Galleria location, with the same superior ingredients and expert preparation that captures the essence of Cantonese cuisine in every bite.
Dishes include the likes of juicy dumplings bursting with flavour, fluffy char siu bao and translucent rice rolls showcasing fresh ingredients. The menu also boasts the signature Peking duck, made using a traditional recipe that has been fine-tuned and results in a crispy, golden exterior that gives way to succulent roasted meat. Bombana and his team have considerately introduced half portions of this star dish, accommodating solo diners or smaller groups keen on savouring the new addition without over-ordering.
